½ Tablespoon olive oil ½ cup diced white onion
1 fresh jalapeno, seeded and diced
16 ounces Queso Mama White Queso with Green Chiles 1 15-ounce can diced tomatoes with green chiles, drained
1 14-ounce can quartered artichoke hearts, drained well and patted dry
2 cups chopped fresh spinach
In a large skillet, heat olive oil to medium heat. Add diced white onion and jalapeno. Sauté until tender, about three minutes. Add the Queso Mama, stirring until melted. Add the diced tomatoes with green chiles, artichoke hearts, and chopped spinach. Stir well. Transfer to a serving dish and serve warm with tortilla chips, bagel chips, or fresh cut vegetables.
NOTE: Queso Mama White Queso with Roasted Jalapenos works just as well for those who want a bit more heat in their favorite new dip!
