Line a baking sheet with foil. Spread tater tots on an even layer, then bake to package directions.
While the tater tots are baking, cook the sausage. We used breakfast sausage, but hot sausage, Chorizo or Italian sausage can also be used. Drain the grease and chop the sausage.
Remove the tater tots from the oven but leave the oven on.
Sprinkle with cheddar cheese and drizzle Queso Mama over top.
Sprinkle chopped tomatoes, sausage, green onions, and jalapeños (if using) on top.
Return to the oven for 5 minutes, until cheese is melted through.
