Ingredients
- 1 bunch kale
- 1/2 cup vidalia onion, small dice
- 1 garlic clove, minced
- 1 tablespoon olive oil
- 1/2 cup water
- 8 oz. Queso Mama, any variety
- Optional:
- 2 tablespoons crispy fried onions
- 1/2 tablespoon Parmesan cheese

Instructions
- Wash the kale, remove the stems and cut into 1 inch pieces.
- In a large saute pan on medium high heat add olive oil, onion, and garlic and cook 3-5 minutes or until they start to turn golden brown.
- Turn the heat down to medium and add the kale and 1/2 cup water.
- Cook and stir with tongs until the kale turns a bright green and is slightly tender.
- Add Queso Mama. Stir until combined and the queso melts.
- Pour into a serving dish. Top with crispy fried onions and Parmesan.
