Ingredients
- 1 or 2 (soft) corn tortillas per person
- 1.2 cup refried beans cooked per person
- 1/4 of your favorite salsa per person
- 1/2 cup Queso Mama per person
- Enough vegetable oil to brush lightly on corn tortillas
- 2 eggs per person
- Cilantro
- Diced jalapeňo (if desired)
Instructions
- The corn tortillas can be lightly brushed w/vegetable oil & baked on a foil-lined cookie sheet in a 350 pre-heated oven, approx 5 minutes each side, until texture is crunchy. Set on serving dishes to cool & lightly salt. Please note: If you prefer to fry your corn tortillas this is perfectly fine.
- Heat 1/2 cup refried beans per dish (whole cup of making two)
- The two eggs per person. Poaching really works well with this Queso Mama recipe, but you prefer pan-frying, cook them sunny-side up!
- Lay 1 or 2 corn tortillas on each plate
- Layer with warm refried beans
- Top with 2 eggs ~~~ lightly salt & pepper
- Cover lightly with 1/4 salsa per each dish
- Pour heated Queso Mama over the tortillas, eggs, beans
- Heating Queso Mama in a microwavable dish, like a 2-cup measuring Pyrex works well. (1/2 cup Queso Mama over each corn tortilla and egg dish!)
- Top with cilantro and jalapeňos if you wish! So good!
