Queso Kale

Queso Mama Kale

Ingredients

  • 1 bunch kale
  • 1/2 cup vidalia onion, small dice
  • 1 garlic clove, minced
  • 1 tablespoon olive oil
  • 1/2 cup water
  • 8 oz. Queso Mama, any variety
  • Optional:
  • 2 tablespoons crispy fried onions
  • 1/2 tablespoon Parmesan cheese

Instructions

  1. Wash the kale, remove the stems and cut into 1 inch pieces.
  2. In a large saute pan on medium high heat add olive oil, onion, and garlic and cook 3-5 minutes or until they start to turn golden brown.
  3. Turn the heat down to medium and add the kale and 1/2 cup water.
  4. Cook and stir with tongs until the kale turns a bright green and is slightly tender.
  5. Add Queso Mama. Stir until combined and the queso melts.
  6. Pour into a serving dish. Top with crispy fried onions and Parmesan.
