Ingredients
- 8.5 oz box Cornbread Mix
- 1 egg
- 1/2 cup Milk
- 1 LB. Ground Beef or Turkey
- 1 oz pack Taco Seasoning
- 14.5 oz can Diced Tomatoes (not drained)
- 15.25 oz can Corn (drained)
- 1 cup Queso Mama
- 1 cup Sour Cream
- Green onions

Instructions
- Preheat oven to 350F
- In a bowl, combine cornbread mix, egg and milk.
- Pour into a greased 9x9 baking dish.
- Bake for 15 minutes.
- While the cornbread base is baking. Cook ground beef in a skillet on medium high heat. Cook until browned and drain oil.
- Add taco seasoning to the beef and stir.
- Add the tomatoes and corn, stir and cook for 2-3 minutes.
- In a separate bowl, combine unheated Queso Mama and sour cream.
- By this time the cornbread should be finished. Add the beef mixture to the cornbread base and spread evenly.
- Top the beef mixture with the Queso Mama/sour cream mixture and spread evenly.
- Bake for 25-30 minutes.
- Top with sliced green onions
